I love figs! I am so fortunate that I have a mature fig tree in my own backyard. I was more excited about the amazing fig tree when we moved in than anything else. They are such a great summer fruit and are so versatile from salads to desserts. This recipe is a great little evening treat as it requires no effort at all.
Figs with Vanilla-bean ice-cream
- 6 ripe figs
- ¼ cup brown sugar
- Vanilla-bean ice-cream
- Maple syrup
- Cut figs in half and roll the cut side into a dish with brown sugar.
- Allow to sit for an hour to absorb sugar.
- Heat a frypan over medium heat and place figs sugar side down for 10-15 seconds until sugar caramelises. Remove from the pan.
- Serve immediately with a spoonful of vanilla-bean ice-cream or even marscapone and drizzle with maple syrup.
