Pineapple Smoothies

I often struggle to eat breakfast in the morning. By the time I get myself showered, dressed, feed and entertain the dog, clean up after the husband, there is about 30 seconds to knock back my Nespresso coffee and race out the door, given I’m probably already 15 minutes late to work. My appetite for something usually more substantial normally kicks in around the time I arrive at work (usually just before 9am). In an attempt to finally get myself on the straight and narrow with my health and fitness I am making a conscious effort to try and eat something healthy for breakfast. When I’m not eating my peach parfait in a mason jar, I am now preparing healthy smoothie options the night before to drink either on the drive in to work or at my desk as I reply to my morning emails. A great way to enjoy your daily fruit intake without too much effort.

Pine-Orange & Coconut Crush

Ingredients

  • 2 Bananas
  • ½ Pineapple
  • 500ml coconut water
  • 1 orange

Method

  1. This recipe does require some pre-prep work. Fill an empty ice-cube tray with the coconut water and freeze overnight.
  2. Chop up the orange, pineapple and banana, removing all the skins.
  3. Add coconut ice-cubes to a blender and whizz, followed by the above mentioned ingredients and blend until your desired consistency.

Tip: By adding the coconut as ice-cubes it gives the smoothie a great flavour while keeping it nice and cool. Pour excess into a jar and store in the fridge for a maximum of 1 day.
