During the week as I prepare myself for work, usher the husband out the door, put things away, feed and entertain the dog, I barely have enough time to down my morning espresso, let alone time to make anything remotely healthy or with any sustenance for breakfast. Therefore, on the weekends, I make it my mantra to start the day with protein and a healthy breakfast.
My favourite weekend breakie is a free-range poached egg with wilted spinach, grilled bacon, and smashed avocado, washed down with a freshly squeezed juice and a side coffee!
I love buying my free-range eggs from my local farmer’s market. They are super fresh, don’t smell and have an amazing bright yellow yolk. My tip is to poach the egg with chopped parsely for a lovely infused flavour.
